Basil & Yoghurt Gnocchi with Avocado
- Basil [fresh or squeezy – I always have squeezy in the fridge]
- Yoghurt [I used plain because I had plain, but greek would probably do nicely too]
Prep time: 5 minutes - no joke
- Boil gnocchi
- Slice Avocado
- When gnocchi is cooked drain and stir in the yoghurt and basil, add a twist of black pepper
- Garnish with avocado
I had stumbled on Housewife Confidential whilst looking for some snack inspiration, I had planned to make her banana bread but had one of those days…..XO actually slept for a whole hour in the morning, so when he woke it was lunch.
I had all the ingredients to make the avocado, basil and yoghurt sauce and some gnocchi in the freezer, so thought I’d give it a try.
