The INCREDIBLE Hulk Spinach & Mango Smoothie
Get 2 of your baby or toddler’s five-a-day into them by telling them it’s a ‘Hulk’ smoothie…We like to use frozen spinach florets, and if you freeze the mango chunks it really does make a delicious dessert. I like to serve in a bowl like a ‘yoghurt’ or ‘mousse’ but you could always make it runnier and serve in a reusable baby food pouch or in a glass as a smoothie!
- 0.5 mango cubed and frozen
- 1 frozen spinach floret
- 0.25 tin of coconut milk
- (optional: sprinkles)
- put the lot in the blender
- serve immediately
- sprinkles optional
- get disappointed the kids eat the lot and don’t leave any for you
The ingredient list for this spinach & mango smoothie is just a rough guide, you can make it runnier or thicker. You can also check my post on coconut milks available in the UK. If for whatever reason your kids might not like coconut milk, you could substitute the coconut milk for a thick natural yoghurt.
Spinach & mango is INCREDIBLY good for you!
We always have a bag of frozen florets in the fridge, and add them to basically everything! It is an excellent source of vitamin K, vitamin A, vitamin C and folic acid (all the stuff in pregnancy vitamins). Vitamin K (remember your baby being offered it after he/she was born?) is important for maintaining bone health and it is difficult to find vegetables richer in vitamin K than spinach!
1 cup of diced mango will provide around 25% of an adults vitamin A intake – stock up in the summer months and add to smoothies in the winter to keep your immune system healthy!
